The Nasty Bits

I've never watched any of his TV shows (save a glimpse of an interview clip on the Internet), nor read any of his books other than Confidential Kitchen. My impressons after reading Confidential Kitchen? An interesting read, no-nonsense contents, very bold and with a choice of spicy expressions. Needles to say, his writing loudly describes his personality; a typical "Bourdain" style. Having enjoyed reading that book, I eagerly took The Nasty Bits off its shelf at Waterstone's not so long ago and rightaway devoured the pages.

The Nasty Bits contains a collection of articles and essays by Bourdain, which were published in various publications. The contents, divided into Salty, Sweet, Sour, Bitter and Umami, are a variation of stories and thoughts, ranging from the kinds of music in the kitchen to restaurant etiquette, from a pampered lifestyle on a luxury ship to the harsh environment of an Inuit tribe, from a delicate US$ 350,-/head sushi dinner and an exclusive food-lab to daring experiences of eating virtually any part of any breathing creature. The collection is followed by a short fiction: A Chef's Christmas, which (I quote from Bourdain himself) is exactly "...a children's Christmas fable - but with language that children probably shouldn't read". The book ends with a Commentary section, where Bourdain made remarks about each article.

Having joined Jalansutra mailing list for a couple of years, I admit, have increased my consciousness towards food and travel, more than ever. But it still does not make me an expert. I have yet to learn many gastronomical terms that Bourdain threw into his writing. However, aside from occassional unfamiliarities of terms, particular points and the overall story are comprehensible. Mainly because this book covers beyond food business: it explores people's passion towards food (something that I share with most of my friends)! I like it how Bourdain tirelessly express and proves, in many ways, that good food doesn't always come with night gowns, hushed atmosphere and silver cutlery, but sincere affection, pleasant (can be either relaxing or lively) surroundings and good companions.

I like it also how Bourdain gives graphic descriptions of his adventures, with brutal honesty. He doesn't hesitate to mention and comment on well-known names (given his expertise, I can see he's entitled to do so). And, being seemingly straight-forward in all aspects as he is, in the commentary section he admits a change of viewpoints. Well, I can imagine it's just like myself looking at my own works from years ago - I must be embarrassed or proud by some - but it's all a process towards maturity, isn't it. Best of all, I find myself very much amused by the harshness of his jokes and the liveliness of his stories. I recommend this book as an entertaining reading material (although not for those who are easily offended by obscene words), a mind-opener, but not as a food guide (I just exchanged words with a friend, "Well, we don't have to eat up to Bourdain's standards" :D).

  3. Nah gue juga kemaren2 itu sampe ngGoogle. Menurut Wikipedia ttg main five basic taste, umami adalah salah satunya. Ini kutipannya:

    Umami is considered a fundamental taste in Japanese and Chinese cooking, but is not discussed as much in Western cuisine. In English, it is sometimes referred to as "savoury", "meaty" or "moreish."

  7. Titaaaa...memang kita satu selera, belon baca bukunya tapi pasti rame... Kalo kata Tita bagus pasti gua percaya bagus... gua seneng banget liat shownya... one of my favourite... he tasted almost everything without using exaggerated aftertaste expressions. A very cool ol' dude...

  10. Kalo gue gak salah, umami itu bhs Indonesianya 'gurih', satu kata yg gak ada padanannya di bhs Inggirs kecuali 'savoury' walaupun 'savoury' benernya lebih ke enak daripada gurih :D.

    Bourdain emang asik Ta, kapan kalo ada kesempatan bisa liat acara TVnya dia..
    Orangnya slenge'an banget, bisa keliatan dari gaya bahasanya kan ?

    Quote yang dia bikin juga selalu asik, misalnya : “Oh my God, that was a religious experience, ... In the words of Homer Simpson, the pig is a magical animal.”

  22. Kalo gue, kata 'nendang' gak terlalu jelas artinya. Gue sih jarang make. Opini gue, kalo yg di maksud, rasa bumbu2nya powerful, ya bisa dibilang the flavours from the spices are powerful. Kalo rasa cabe nendang banget setelah suap ke dua bisa dibilang the chili kicks in after the second slurp. Kalo gile, rasa sotonya nendang sekali mungkin bisa dibilang the soto really kicks a punch. Yah, paling gak gue pake kata2 di atas itu sih untuk jabarin rasa2. :p. Kalo yang lain?

Wah,emang bener TV shownya dia bagus bener,Kebetulan saya sudah ketemu dia waktu dia shooting di jakarta,ngambil gambarnya Baso Kumis di Blok S.dia itu Chef yang handal,kebetulan saya juga Chef,saya jg ada beberapa TV show tapi saya mesti belajar banyak dati dia juga,Istilah Umami adalah Cooking term yang berarti Bisa nggak terasa! misalnya Ada ice cream dari bahan bawang putih sdh jelas bahannya tapi rasanya bisa nggak terasa....gitu kaya nya yg saya tahu

Iya waktu itu saya lagi jalan di Blok S rencananya sih mau makan Baso kumis,gak taunya dia lagi ngambil gambar sama crew2 nya.kita ngobrol2 deh,trus sambil ngerokok terus dia,dia bilang mau ke jogja(sebelum gempa)tapi kata crewnya dia juga mau ke Ciamis mau ngeliput kerajinan disana.Sambil makan baso kita ngobrolin program TV nya,saya bilang saya juga pernah bawain acara masak di beberapa stasion TV,karena saya interest bisa jadi presenter di Discovery Channel....kita ngobrol sambil di shoot juga sama cameramannya.mudah2 an di siarin diprogram TV nya .gitu deh terus mereka berangkat ke ciami naik mobil ......

    btw, bourdain menyebut sedikit ttg indonesia di wawancaranya dengan bookslut

  31. A cooks Tour dan No Reservation emang ciamik, walau terkadang over dramatik, kayak ngasih liat Bourdain rendem2an di Onsen jepang, duile segitu seksinya kah dikau. Tapi nggak apa2 emang krn nyeleneh dia ngetop

    Nasty Bits hmmm must buy banget nih, mungkin setelah buku berjudul "I shake Hand with the devil", memoir General Romeo Dallaire yg menjadi komandan UN peacekeeping force di Rwanda saat genosida terjadi,
    well Genocide Memoir and Culinary Adventures in book wish list , call me a weirdo but that's me hehehhe

  35. Ta, aku udah buka klip dari link yang dikasih Arie. Dia berdiri di tengah sawah, ada suara Adzan, dan dia nggak berenti muji2 kecantikan Indonesia (sinyirnya nggak keliatan blas). Kalo mau ketawa2 masuk ke foto2nya deh. Disitu baru keliatan 'asli'nya dia.

  38. Gue selesai baca ini nih Ta. Komplen gue satu. Setelah baca buku dia yg kitchen confidential, tus yg ini, kayaknya dia tuh mencoba terlalu keras untuk 'demystify' koki2. Kesannya jadi: iyaaaa, I get it! Gak usah diulang2, di Kitchen Confidential udah cukup :D. Kalo aja dia berlanjut dengan review2nya, itu baru asik.

    Tapi gaya bahasa dia emang canggih! Cara ceritanya lutu cuma dia bener2 gak cocok nulis fiksi, hahahah :)). Akhirnya gue kasih bintang 4 deh.

    PS: gue suka description dia tentang foodie di Singapur. Akurat banget! Itulah Singapur2 yg gue kenal, the true Singaporeans :D.
